Let’s rewind to January of this year. There is snow on the ground. I’m in Salt Lake City for a blog conference called Alt Summit. Melissa and I are staying at Heidi‘s incredible mountain home. The two of us have stayed up way too late talking downstairs. I’ve had a couple glasses of wine; I think that Melissa has also had a couple glasses of wine.
I’m going on about how I am convinced that one of my dear friends is with child. She hasn’t gone public with the information yet, so I’ve been a quiet observer for the past eight weeks. The first sign was when my friend feigned a headache at girls night so she could pass on wine. Suspicious, I thought. Then she switched to natural deodorant. Interesting. She even hosted a fun holiday party and served virgin punch as a mixer. I wanted to give her a high five for that move, but I didn’t want to let the cat of the bag.
I’m telling Melissa about how I’m so smart because I’ve figured out that my friend has a bun in the oven (you can’t fool me!), and all the while, Melissa is hiding a very exciting secret of her own. You got me good, Melissa. Friends having babies really brings out the sappy side of me, so I’ll quit writing before I start throwing around gushy words like blessing and precious. Having met both Melissa and Kevin, however, I can say with absolute certainty that they are bringing a kind, creative and cute little lady into the world. Congrats, you two!
Today, we’re celebrating Melissa with waffles! My friend Erin of Naturally Ella, who is also Melissa’s co-worker, organized a surprise virtual baby shower for Melissa. Our recipes are based on Melissa’s whole grain waffles recipe, which is one of her most popular. It’s perfect timing, too, because I just used a gift card on this fancy pants waffle maker. Now I want to host a real-life waffle party!
For my banana nut waffles, I replaced half of the milk in the original recipe with mashed bananas, and added walnuts and a hint of spice. The walnuts are more than just delicious—I incorporated them because they’re high in omega-3 fatty acids, which are important for expectant and nursing moms. I gifted my leftover waffles to my friends who have a newborn because I thought some wholesome and delicious waffles might be something to look forward to after a long night with the baby.
If you’re craving the banana-nut combo but don’t have a waffle maker, you could totally add walnuts to my banana oat pancakes or banana bread.

Light and crisp, whole wheat banana nut waffles. Recipe yields around 5 round, 7-inch Belgian waffles, or 8 small, square Belgian waffles (as shown here).
Ingredients
- 1 ½ cup white whole wheat flour or regular whole wheat flour
- 2 tablespoons sugar (cane sugar or brown sugar)
- 2 teaspoons aluminum-free baking powder
- ½ teaspoon sea salt
- ¼ teaspoon nutmeg
- ¾ cup chopped walnuts or pecans
- ⅓ cup melted coconut oil
- ¾ cup milk of choice, lukewarm
- ¾ cup overripe mashed bananas (about 2 small bananas), plus more for topping
- 1 large egg
- ½ teaspoon vanilla extract
Instructions
- Heat waffle iron on high heat, about one notch down from the highest setting. Preheat oven to 250 degrees Fahrenheit.
- In a medium bowl, whisk together the flour, sugar, baking powder, sea salt and nutmeg. Stir in the chopped walnuts.
- In a microwave-safe bowl, combine the melted coconut oil and milk. Microwave for 30 seconds, or until the mixture is lukewarm. Whisk in mashed banana, egg, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined. Be careful not to over mix. Tiny lumps may remain. Pour batter onto the heated waffle iron, enough to cover the center and most of the central surface area. Once the iron has stopped steaming and the waffle is deeply golden, transfer it to a cooling rack or baking sheet. Don’t stack your waffles on top of each other, or they’ll lose crispness. Place in oven to keep warm. Repeat.
- Top with sliced bananas and 100% pure maple syrup, and serve. Save leftovers in the fridge and reheat by placing the waffle back in the griddle or in the toaster on a light setting.
Notes
Recipe adapted from Melissa’s version of King Arthur’s whole wheat waffles.
Ingredient notes: I tried making this recipe using butter instead of coconut oil and replaced ½ cup whole wheat flour with ½ cup oat flour, but the resulting waffles were not as crisp. I liked the version typed above the best.
If you love this recipe: You’ll also love my coconut waffles! They’re based on the same recipe. I have more banana treats here.

Such a cute post! You are so sweet and I loved your story! Also, I love these waffles! Banana nut? Heck yes! So healthy and delicious and pretty too!
Congratulation
It all makes sense now!!! I thought you had been drinking the bubblies with us, but once I found out, I figured Heidi was in on the secret. You fooled me! Really, I’m so happy for you guys, I can’t wait to meet your baby girl, and I’m so glad we’re friends!
Ali @ Inspiralized
How quickly can you make these and delivery them to Jersey City, NJ? These waffles look awesome!! Well done and phenomenal photography. Loving your blog!

I had to read this out loud to Kev. Still laughing! I thought for sure I blew my cover. Thankfully Heidi and her husband came to the rescue with my mock-tini’s. Only days (or weeks) till I can share a glass of wine, or 3, with you! Thank you so so much for this Kathryne! Thanks for your words of encouragement and friendship. So glad this blogging world brought us together. Thanks for giving me more waffle recipes to try too. Kev always gets on me for posting a million Instie pics of waffles. Here’s to a million more!
Kate
AHA! It all makes sense now!!! I thought you had been drinking the bubblies with us, but once I found out, I figured Heidi was in on the secret. You fooled me! Really, I’m so happy for you guys, I can’t wait to meet your baby girl, and I’m so glad we’re friends! Congratulations to the moon!

She fooled me too. When she told me she was pregnant I think my second reaction after hooray was “Wait, you weren’t drinking at ALT?!?”
Jeanine
I noticed she wasn’t drinking – when we were looking for the bar and she was running to the dessert tables…
I can’t believe I didn’t figure it out!
Kate
I figured that was just typical Melissa. :)
Heidi
She’s a sneaky one that Melissa. The good part was there was more left for us. And she was the master of the waffle iron minus the late night drowsies.
Kate
She got me good! It all makes sense to me now that I know you were in on it, too. :)

Melissa is the sweetest and I’m sure she will have the cutest baby ever. You guys rock giving her waffles – she loves those waffles and your version looks delicious !

Wow, these waffles looks amazing!! My sis-in-law is expecting and has been craving nothing but sweets. I’m going to make her a batch of these – sweets she can feel good about! Thanks for sharing.
Kate
My friend was craving sweet through her pregnancy, too! Hope these healthy waffles satisfy your sister-in-law’s sweet tooth. Don’t forget to give her some real maple syrup, too!

Looooove it! SO happy for Melissa and I want 47 of these waffles. Stat.

Congrats to Melissa!! No one’s pullin’ a fast one on you, Kate ;)
These waffles look so delicious, and ever since trying your divine coconut banana muffins this weekend, I am psyched to try any of your recipes!
Kate
Haha. I’m so glad to hear you enjoyed the coconut banana muffins, Alison. Hope you love these waffles, too!
Ashley
So, so sweet!! And, uhh…delicious! :)
Chelsea Preedy
Ah! Babies are just so much fun. I absolutely love the idea of doing a virtual baby shower. That would have been perfect a couple of months ago when my sister-in-law was having hers and I couldn’t be there. The waffles look delicious too. Perfect mom-to-be recipe :)
Kasey
I remember you telling me the story about figuring out your friend was pregnant – over coffee in Nashville! These waffles look so, so good. I seriously don’t think there’s a better way to start a morning. xoxo
Kate
I’m so glad we got to meet up in Nashville. That was a nice morning. I still have the mug! Hope we can find a way to see each other again soon.

That detective work must have been fun, but what a great surprise! You really have me craving waffles now. And bananas. I think these would be perfect for breakfast for dinner :)
Sophie
Banana nut is seriously one of my top flavor combos! These sound delish!!

You had me smiling all the way through this post! I love how friend can form over the smallest things. You must be very lucky to have her as friend. I am looking forward to making these for pregant sister too this weekend.
Maria Tadic
Considering I have a TON of frozen bananas, have a banana nut anything obsession, I will make these asap! AND I just saw you had a banana bread trail mix thing that I defo need to try!
Kate
Let me know how the waffles turn out, Maria! I think you will enjoy the banana bread, too.

I’ve recently experienced a banana Renaissance, and now I’m obsessed with cooking with them all the time. I think I might have to try these waffles next! Thank you for sharing!

Thanks, Laura!
Kiran
Awww.. I love the blogging community. So many precious friendships and a great way to celebrate each other. A lovely treat for Melissa :)
Margarita
Love this banana waffle recipe… your pictures are soooo pretty too! And, I have some giftcards to spend as well… but I think I need to get a blender or food processor first before a waffle maker. Think this recipe would work as a pancake?
Kate
Oh fun! Yes, I would get a blender or food processor first. The classic Cuisinart food processor is about the same price as this swanky waffle maker. I’m not sure if this recipe would make a great pancake, but my banana pancakes recipe is one of my most popular, and you could totally mix walnuts into the batter. Here’s the recipe.
Katrina @ WVS
Daaang, these look perfect! And for such a fun reason. Love this post :)
Lindsey
What a perfectly lovely way to celebrate! Congrats to Melissa!
Joanne
I’m always on the lookout for my friends and coworkers being pregnant because I’m always so excited to be excited for them! Next time one of them is, I’m so celebrating with waffles. What a fabulous idea!
Holly
You should DEFINITELY host a fancy pants waffle party! Can I come?! Looks delicious, as always :)
Kate
Of course you can come!
Grace@ FoodFitnessFr
What a great surprise! And treat to go with it. I just had waffles this past weekend…for the first time all summer. Gasp! Nothing goes better with them than fresh fruit, so this version sounds fantastic. And congrats to Melissa!
Crystle
I just want to commend you on gifting your extra waffles to the parents of a newborn (D&J I presume?). ‘Friend-delivered Meals on Wheels’ was the best thing our friends did for us in our first month of parenthood!
Kate
Yep, D&J! I’ve been trying to think of some hearty dinner options to make for them… any suggestions? I guess casserole-type dishes would make good leftovers.
Sophie
Yall are so thoughtful to do this virtual baby shower! Congratulations to Melissa :) These waffles look just so so good, I’m pleased we recently bought a waffle maker so I can try them! Banana and nut together, yes please!
I often turn here for inspiation when making dishes for new parents to help them out :) I like to do frozen dishes/casseroles so that they can thaw and bake them that day, or save in the freezer til a time that works for them. Pot pies, for example in a diposable 8×8 pan (no dishes to return) or any of your fabulous burritos here, wrapped and tucked into a foil pan, covered tightly and frozen — maybe with a can of good enchilada sauce or a homemade sauce if it would reheat well from frozen — it can be baked into enchiladas any time they wish.
Or if a time is scheduled to give a meal, I will do an entree salad — something with protein, lentils or quinoa or beans — that they can toss with dressing when they’re ready to dig in. Such dishes can be walked away from when tending to a baby and eaten whenever, without the disappointment of having dinner go cold (it is already cold!), etc. Good luck!
Kate
Sophie, thank you so much for sharing your meal ideas for new parents! I have been wanting to do more for my friends, but unsure of where to start. You’ve given me some really great ideas here. Now I just need to get cooking!
Ashley-BakerbyNature
I love your stories, lady! And these waffles?! Seriously – we need a real life sleepover asap.

These photos are beautiful, Kate! I love the photo effects. The waffles look pretty good too! :) Cheers.
Didi
It’s always cute the way friends do no want to reveal immediately their pregnancy… I had a friend doing the same (except that I was the only one in the our circle of friends to know it and I had to carry the secret too). Anyway I love the idea of the banana nut waffles, I guess that for even more indulgence I would add a little chocolate sauce…
Antonia
These waffles look SO good. I have to have at least half a banana for breakfast every morning, otherwise I don’t feel right. So this is the perfect recipe for me. Finally I have a good excuse to invest in a waffle iron…hehe
Lucy @ BakePlaySmile
Yum! These look soooo good!! Might have to make them for breakfast this weekend! Love the look of this recipe! Thanks :-)
Laura
My friend asked me if I was pregnant when I told her I had finally found an amazing natural deodorant that I was so stoked on!!!! Pretty much died when I read that in your story. Our go-to Sunday morning waffle recipe has banana and walnuts (+ chocolate chips most times), so obviously I luuurve your variation on Melissa’s recipe. These photos are really bomb too. Congrats on your new waffle iron! :))) xo
Kate
Ok, I need to know what natural deodorant you’re using.
Monique @ Ambitious

These waffles were absolutely incredible and so healthy! I couldn’t even tell that they were entirely whole wheat and I loved that they include coconut oil instead of butter/veg oil. I threw in a tablespoon of chia seeds too and they were delicious. Next time, I might use just 1 tablespoon of sugar–I thought the bananas provided plenty of sweetness on their own. Will definitely be making these again :)
Kate
Thanks, Emily! I’m so glad you loved the waffles. I haven’t gotten much feedback on them. Feel free to scale back on the sugar. I included it because I’ve read that including a bit of sugar in waffles and pancakes helps reduce burning on the edges, so keep an eye on those edges.
Emily
Loved these!

Hi Kate, I just made your waffles and they tasted great!
I used hazelnuts instead of walnuts, honey instead of sugar and my home-made egg-replacer and it didn’t do any harm at all ;-) ¼ of the amount (for just me) didn’t fill the whole of my 5-heart-shaped waffle iron though, I am still practicing to adjust recipes to my German waffle iron =)
When mashing the banana I might try mashing it like you did net time so that I have little banana chunks in the batter. This time I just threw it into the blender with all liquid ingredients, as I was making the cashew milk from scratch from nuts anyway. But I imagine chunks might be nice.
I would love to see some more waffle recipes =) Thanks!
★★★★★
Kate
Ines, your waffles with hazelnuts sound lovely! I’ll try to publish more waffles for you soon.
carol
Banana nut waffles sound great. Something I learned from a recipe long ago is to put the nuts first on the waffle iron and then add the batter (no nuts in the batter). This toasts the nuts while the waffle is baking, and if you have people who don’t like nuts (as in the rest of my family) you can reserve one square of the waffle iron as the nuts square and the others don’t have to deal with it. It’s not safe enough for a nut allergy but keeps it nut free for those who just don’t care for them.
Kate
Oh, that’s such a great idea! Thanks, Carol!
Jessica
I never comment on blogs (I’m a lurker), but I just had to say that 1) This recipe is delicious (and easily adapted to being gluten-free). The waffles are crispy on the outside and fluffy inside. PERFECT! And 2) This tip about putting nuts onto the waffle iron but not in the batter? BRILLIANT! The nuts totally toasted and tasted so great!
★★★★★
Kate
Thanks, Jessica!!
chelsey
These were great!! I was really skeptical because I’m particular about the texture of my waffles, and I was afraid they wouldn’t be truly crispy on the outside and soft in the middle. Anyway, I followed the recipe exactly, and they turned out fantastic! I was wary about using the coconut oil instead of the butter but it made them so surprisingly rich (and probably contributed the great texture)!
I also did what another commenter said, and I added the walnuts to the batter once it was in the waffle iron, rather than directly to the batter, and it was lovely!
Anyway, these were delightful. Thank you for the recipe!
Kate
Thanks, Chelsey! I’m particular about waffles, too, so you can trust mine to be crispy on the outside and soft in the middle. :)
Lexie
Hey Kate!
I made these and the flavors were divine (although the nutmeg didn’t come through at all), but they were way too dense! Could it be that I just used two smashed bananas and didn’t actually measure how much those two bananas yeilded? I should have followed my gut instinct and added more liquid (the batter was not at all pourable). Thank you in advance! Have a wonderful day :)
★★★★
Kate
Hey Lexie! Yeah, I think you may have added more banana. I’ve found that the amount of banana makes quite a difference, and the balance of liquid to fat in waffles is important, so I’d say measure out those bananas next time! Hope they turn out perfectly for you.
Heather
Any suggestions on an egg replacer for this recipe?
Kate
Hi Heather, I’m not 100 percent sure it will work, but I’m pretty confident that flax eggs or chia eggs would work. I know they have worked in my oat waffles. Please let me know if you try!

After making these waffles too many times to count, I had to post something to thank you for my absolute favourite breakfast waffle recipe ever! My 3 year old makes them with me and he loves helping to crack the egg and mash up the banana. I’m married to a Belgian, so we’re pretty harsh judges when it comes to waffles, especially “fancy” ones with nuts and whatnot in them, but these are absolutely perfect. I ate them all through my pregnancy and nowadays I always make one without nuts for my 9-month-old to share as well. :)

Colleen
This is our all time favorite waffle recipe! I always make a double batch. My daughter can’t have dairy so these work for the whole family. I always use brown sugar. I use light olive oil instead of coconut. And sometimes I use frozen bananas. I basically make banana ice cream in my blender then measure it out (I let the kids have any extra). So I just heat the oil and milk a little extra so it will melt the banana goop when I add it.
Thank you for this wonderful recipe!

I was a little skeptical about putting walnuts in batter but this was amazing! My kids loved it. I did not need syrup with it. It’s definitely a normal breakfast rotation. The only thing I did different was blend the walnuts so they are fine crumbs. That way my kids won’t notice it. Thanks Kate for yet another amazing recipe.

Thank you for your recipe. I made it first your way. The second time I used 2 cups of sprouted wheat flour, 1 cup each milk, bananas and walnuts, one-half cup coconut oil one large egg, 2.5 teaspoons baking powder and slightly more of salt, nutmeg and powdered vanilla. I mixed the dry ingredients then blended in a blender the milk, egg, banana, walnuts and egg. I mixed wet with dry then added the coconut oil. The result was excellent and faster my way.

After comparing King Arthur recipe with this, I noticed the difference in milk. These needed that extra liquid. Possibly a mistake on the recipe? My son would not eat them and I had to swallow a little harder. But I would try the recipe again adding more liquid!

★★★★★
Kate
Hi Sanja! I’m sorry to hear they were sticking. You can always pre-spray it in the future. Or, adjust your heat settings some. I like my waffles a little on the crispy side and find they release better from my waffle maker that way too.
Christina Lucas
I just made these with almond milk, pecans, and all-purpose flour (only because I was out of whole wheat flour). I love the texture; crisp on the outside and fluffy on the inside. I also poured the batter on the hot waffle iron and sprinkled the pecans on top which gave them a nice toasted flavor. I like this trick because you can easily customize the waffle for each person.
I will definitely make these again soon with whole wheat flour because that is what I would normally use. :)

On the double recipe.
1. Replaced 1 cup flour with 1 cup traditional rolled oats.
2. 2 table spoons baking powder
3. No sugar added at all.
4. Replaced coconut oil with 1 table spoon olive oil
5. 1 tsp nutmeg
6. 1.5 tsp cinnamon
7 Only 1/2 cup chopped nuts

I’ve been using this recipe every time I make waffles and I love it! I’m wondering if the batter is supposed to be quite thick? They turn out great but I couldn’t help reading in the recipe it says “pour” the batter – It’s more like spoon batter for me. Just curious. Thanks!
★★★★★
Kate
Hi Catherine! It will be thicker than pancake mixture. How did you measure your flour? I wonder if you have a heavier batter.
Catherine Cullen
Ohhh really good call about measuring flour. I just scope the measuring cup into my flour container. I wonder if I might try the spooning and levelling technique. Maybe trying the latter will give me a less thick batter? Thanks!
Kate
Hi Catherine! Yes, how you measure your flour is important. The later will likely give you a much more consistent result!
Rokai
Pretty good! I omitted the nuts and used ghee instead of coconut oil and topped it with tender coconut creme with honey. Delicious!
The only thing I struggled was getting the waffles out of the machine. So basically I ate it crumbles or scramble. Still good though..

One of my fav waffle recipes – thanks for sharing! It turns out so crisp, love it I also like mixing flour, e.g. 1/3 of buckwheat/oat flour and 2/3 of whole wheat. Instead of chopped nuts I add some almond flour or coconut flakes (as my toddler does not like bigger nut pieces). With all these minor experiments it still comes out yummy!
Was wondering though whether good quality olive oil could be used instead of coconut oil
