Earlier this week, I shared your favorite recipes from last year. Here are my favorites. This is always a tough list for me to make since I legitimately love every single recipe that makes it the blog.
You might be aiming to eat healthier after the holidays (me, too) so I tried to select meals that are pretty darn healthy and enticing at the same time. Granted, if you’re craving comfort food, try this spinach artichoke dip or a soothing mug of creamy golden milk.
We’re setting into our new home and I finally have an organized pantry and desk space. I’ll be back next week with brand new recipes. Stay well!
1) Fresh Black Bean Burrito Bowl
Gluten free and easily vegan
This bowl is basically what I want every meal to be! Super fresh, flavorful and satisfying. Make the components on the weekend and enjoy them throughout the week.
2) Vegetarian “BLT” Sandwich
Vegetarian
I replaced the usual bacon with pan-fried halloumi cheese, which is surprisingly similar in flavor and texture. If you happen across a great tomato, make these BLT’s.
3) Tangy Lentil Salad with Dill & Pepperoncini
Gluten free and vegan
As I said in the post, these flavors are not for everyone. This recipe satisfied my cravings, and I’m so glad to see that you all enjoyed it, too!
4) Ultimate Veggie Pizza
Vegetarian
About time I created my own quintessential veggie pizza. Here it is. It comes together quickly, entirely from scratch, with my Whole Wheat Pizza Dough and Easy Pizza Sauce.
5) Crispy Baked Tostones
Gluten free and vegan (pending dipping sauce selection)
I’m just so pleased with how these baked (not fried) tostones turned out. You can better appreciate the flavor of plantains in this version. These tostones are a fun and tasty savory snack, and I insist that you serve them with my Aji Verde Sauce.
6) Quick Chana Masala
Gluten free and vegan
This year, I revisited an old chana masala recipe on the blog and tweaked it to suit my current taste buds. This vegan dish is simple, delicious and perfect for weeknights.
7) Lemony Green Pasta with Peas & Ricotta
Easily gluten free
I’ll admit that this is not the prettiest pasta dish on the blog (ribbit!). But it is a very nutritious, feel-good meal.
8) Favorite Veggie Burgers
Gluten free and vegan (pending your choice of buns and toppings)
Now, my longstanding go-to veggie burger recipe matches the recipe in my book. These are forever and always my favorite veggie burgers, and you can bake them all at once (much easier than pan-frying).
9) Colorful Veggie Sesame Noodles
Potentially gluten free and vegan
Just as good as it looks. Enough said.
10) Best Ever Green Beans
Gluten free and easily vegan
I wasn’t kidding when I called these green beans the “best ever.” I legitimately crave them. They’re a spin on traditional French haricots verts amandine, and they are perhaps the perfect side dish to more traditional meals.
