Hi! I like the flavor of brown rice best, but you can use white. Make sure you adjust cooking time. You can use apple cider if you don’t have any on hand. White vinegar may also work, but is stronger and may need just a little sugar to help make up for the flavor.

I’ve made a few of your recipes so far and am loving them! My husband and I try to do vegetarian a few days a week just to help with our carbon footprint. I have been wanting to try this green curry because my last one was flat, watery and frankly…terrible! Hahaha…that being said I don’t have brown rice wine vinegar…will it be just as tasty with regular rice wine vinegar?

I felt it needed a little tweaking though. I fried some cumin seeds and mustard seeds before adding the garlic, ginger, and onion. I also added in a tomato before the water and coconut milk and then blended them all before putting in the tofu. It turned out great. Thanks for the recipe!

I would say it is both and brand does play a roll. I’m sorry you didn’t like the red curry you tried! You could use whole milk instead. It won’t be as authentic, but should still work.
