This was amazing and simple. I went a little off script and added fried prosciutto with melted mozzarella. I also did fresh basil and bell pepper instead of pesto. Thanks for the recipe!

It takes me right back to a beach on Crete I visited as a child where the local beach cafeteria made something similar.
I add feta and sometimes tomatoes, and I use fresh bell pepper instead of roasted because those are expensive in Denmark, hehe.
