best queso recipe

I’m super excited to share this queso recipe with you. This Mexican dip is cheesy, creamy and full of fresh flavor. It’s surprisingly easy to make and utterly irresistible.

This recipe uses a simple secret ingredient—cream cheese—to achieve its gloriously creamy texture and light tang. No flour and no fussy roux required here (as a bonus, this queso is gluten free).

This stovetop queso possesses all of Velveeta’s positive attributes, but it tastes a million times nicer. It even cools down with grace, developing just a slight skin on top that really doesn’t detract from its appeal.

queso ingredients

If you’re like me, you probably don’t need an excuse to eat queso while sipping a margarita. I grew up around a lot of Tex-Mex food and like to consider myself a queso connoisseur. If queso is on the menu, I’ve likely sampled it.

My husband, on the other hand, exercises an impressive amount of restraint when it comes to queso. He tells me he doesn’t like it. (He’s generally a rational man, though I question him in cheese-related matters.) This queso is an exception to his rule. He loves it.

We both agree that this is the best queso we’ve ever had. Try it, and I hope you’ll say the same!

Buffalo sauce on Brussels sprouts? Yes. Yes indeed, a very good idea. I only thought to try this combination after, oh, eight failed attempts at buffalo cauliflower. (I think I’ve just figured out the trick to that one, but trust me, you’ll definitely want to give these sprouts a try this weekend.)

These buffalo Brussels sprouts are a fantastic Super Bowl appetizer. They’re fresh and irresistibly spicy at the same time. You can have your fill of these and feel good about it later.

Buffalo Brussels sprouts ingredients

This recipe starts off with a base of golden, roasted Brussels sprouts drizzled with a simple, three-ingredient homemade buffalo sauce. Top them off with ripe avocado or blue cheese (your choice, both optional) and fresh herbs.

These sprouts will offer some balance to a full-blown snack spread. I hope you love them as much as I do!

cheese board recipe

Confession: I brought a sad cheese plate to last year’s Friendsgiving, and it went ignored in the corner. It was an embarrassing moment for a cookbook author, and I’ve been determined to improve my cheese board game ever since.

I walked into the party to find a gorgeous and elaborate cheese board nearly spanning the full length of the dinner table. My friend Jordan has a degree in sculpture, and she can sure put together a beautiful cheese board.

I took the opportunity to study her design. I can’t say that my efforts are quite to her level yet, but I’ve picked up a few tips and tricks to share with you today.

cheese and crackers

Building a beautiful cheese board feels like a fun art project. We’ll mix different flavors, colors, shapes and textures to build an enticing appetizer board. Give yourself some time to put it together, and you’ll enjoy the process all the more. The trick is to fill every little space on the board with nuts and fruit so it looks completely abundant.

A cheese board is the perfect excuse to break out your special serving items. If you don’t have a dedicated cheese board in your cabinets, though, don’t fret. For your base, you can use a nice wooden cutting board, a large serving platter, or even a tray or baking sheet covered with parchment paper. If you don’t have a set of cheese knives, offer butter knives, cocktail forks, cocktail picks or toothpicks.

Basically, anything goes, and no occasion is too minor for a cheese board. You just might have everything you need at home already. How about a cheese board with your French 75 this evening?

easy tapenade recipe

Olive lovers, tapenade is for you! Tapenade is an olive spread or dip hailing from the Provence region in France. It’s bold, zippy, briny and salty, though we’ll be sure to keep the salt level in check.

Served with crostini or crackers, tapenade is a wonderful appetizer with drinks. It offers some welcome contrast when served with creamy dips, like hummus or spinach artichoke dip. You can also spread it onto sandwiches, dollop it onto salads, and more. Tapenade will keep for a week or two in the fridge, so you’ll find many uses for it.

tapenade ingredients

Tapenade is named after the Provençal word for capers, tapenas. Over the years, olives have become the predominant ingredient, and I used capers as a subtle accent. Similar olive spreads have been served in the Mediterranean for ages, which is why tapenade is a natural pairing with your favorite Mediterranean flavors.

Traditional tapenade also includes anchovies, but being vegetarian, I omitted them. This dip is loaded with complex flavor regardless, and it’s suitable for vegans and those with shellfish allergies as well.

To make this easy tapenade, you’ll need just a few basic ingredients and a food processor. It comes together in about 10 minutes with mostly pantry ingredients! You’ll need Castelvetrano and Kalamata olives, fresh parsley, capers, olive oil, garlic and lemon juice. Let’s make some already.

creamy spinach artichoke dip recipe

This hot spinach artichoke dip is pure comfort food. Sign me up. This dip recipe comes together in under 20 minutes with basic ingredients: spinach, artichoke, cream cheese, sour cream, plus green onions and poblano pepper or bell pepper.

We’ll cook the green onions until they’re a little golden and frazzled around the edges, which is an easy way to yield tons of flavor. I’m obsessed with using lightly spicy, tender poblanos in this recipe (a great twist on standard spinach artichoke dip) but you can use a red bell pepper for a mild dip (also delicious!).

creamy spinach artichoke dip ingredients

The end result is not the most beautiful dip in the world, but it’s definitely amongst the most tasty. It’s creamy and indulgent, yet tastes fresh and full of flavor. This dip is fully loaded with veggies and greens, so it’s actually more redeeming than you might think.

I hope you’ll whip together this spinach artichoke dip on the holidays, or for movie nights, or just any time you get a hankering for it. I’m daydreaming about serving this dip at parties next year!

tostones recipe

I’m so excited to share these crispy baked tostones with you! I discovered tostones a few years ago when I visited Costa Rica with my grandmother. Traditional tostones are fried green plantains, flattened and fried again until they’re golden and crispy. You could almost call them Caribbean French fries, and I couldn’t get enough on that trip.

I got a hankering for some tostones a few months ago and decided to learn how to make them. As I was typing up my perfected skillet-fried tostones technique to share with you, a little voice in my head asked, “Why didn’t you try baking them?”

green plantains for tostones

I hit pause on my post and fired up the oven. As it turns out, baked tostones are great. Compared to fried tostones, they’re easier to make, use less oil, and yield a crisp result that tastes more like plantains and less like oil. Hooray!

These baked tostones are a fun little project. Make them for game days, afternoon snacks, or of course, serve them as a side dish with Caribbean meals. They’re especially wonderful with a bold and creamy dipping sauce, like this Aji Verde. Please try them and let me know what you think.

best roasted pumpkin seeds recipe

Have you carved your pumpkin yet? Let’s roast some pumpkin seeds to make a night of it! When I was growing up, we carved our jack o’lanterns every year before Halloween, and my mom always roasted the seeds for a tasty snack. Pumpkin seeds are nutritious, too—they’re a great source of magnesium and plant-based protein.

Pumpkin carving night is still one of my favorite nights of the year, and now I carry on the tradition with my husband and a glass of wine. While I’m only a mediocre pumpkin carver, I’ve perfected my roasted pumpkin seed technique over the years. I’m sharing all of my tips with you today.

removing seeds from pumpkin

Roasting pumpkin seeds is really fun and easy when you know how to do it. When you don’t, you can make a big mess and end up with seeds that are either burnt, or never golden.

This foolproof recipe yields perfectly golden pumpkin seeds, every time! Keep reading to learn the easiest way to clean those slippery seeds.

caponata with roasted eggplant

Let’s make homemade caponata! This classic Sicilian appetizer or side dish is perfect for late summer meals. This recipe combines roasted (not fried) eggplant with sautéed bell pepper, celery, tomatoes, olives and capers. Red wine vinegar and honey make it irresistibly tangy and sweet. If you generally enjoy these bold flavors, you’re going to love caponata.

Since international travel is largely off the table, I’ve been traveling vicariously through my food. This caponata is the perfect example. I’ve yet to make my way to Sicily to sample authentic caponata, but learning to make this dish has deepened my desire to explore the island. Mark my words, I’ll get there someday.

caponata ingredients

Caponata recipes vary from region to region and household to household. This recipe is where I landed. I took some cooking cues from my ratatouille recipe, which also features roasted eggplant stirred into a simmering tomato sauce. Caponata’s flavors are even deeper and more complex largely due to the intense agrodolce factor, or the interplay between sweet (honey and raisins) and sour (vinegar and capers).

I can’t claim this recipe is entirely authentic, but I hope it offers you a little taste of Sicily.

homemade crostini recipe

Who doesn’t love golden, crisp crostini? Crostini is crusty bread brushed with olive oil, toasted in the oven or in the grill to perfection. I love how it shatters between my teeth, offering the perfect contrast to a creamy spread or dip.

The word crostini means “little crusts” in Italian. I typically associate crostini with party appetizers and cheese plates, but you don’t have to throw a party to enjoy these little toasts.

For example, you can resuscitate a stale baguette by turning it into crostini. You can whip together a fun lunch or snack in no time with crostini and condiments from your fridge. Or you can make an everyday dinner more festive by starting with a round of crostini and a creamy spread. Crostini is the answer!

how to make crostini

I recently baked up some crostini to accompany my upcoming caponata recipe. As I consulted my bruschetta recipe for guidance, I realized that I must not be the only person wondering how to make crostini. So here I am, waxing poetic about Italian toasts. Did you know that the singular form of crostini is crostino?

Today, I’m sharing all my best crostini topping suggestions and a simple, foolproof recipe for homemade crostini. Do tell me how you enjoy your crostini in the comments!

sesame roasted green beans

Have you tried roasted green beans? They’re new to me, so I’m excited to spread the word with this recipe! Roasted green beans are a light and healthy side dish to accompany heavier meals.

Green beans are one of the quickest roasted veggie options since they’re ready after just 15 minutes in the oven. Like all roasted vegetables, roasted green beans taste intensified and caramelized, like more sophisticated versions of their raw or steamed states.

fresh green beans

We discovered roasted green beans on the menu at Josephine in Nashville. I always search restaurant menus for fun side dishes, and their charred green beans did not disappoint. They served them with tahini and toasted sesame seeds, which inspired the variation you see above.

Roasted green beans are quite simple to prepare. I have just a few tips before you get started:

  • Start with fresh, vibrant green beans. They should have firm, even skin and snap easily. Don’t bother roasting old, starchy green beans.
  • Pat your green beans dry before tossing with oil. Drops of water on the outside will turn into mushy spots in the oven.
  • Don’t crowd the beans. If you want to double the recipe to serve a larger crowd, split the beans across two pans.
  • Stop roasting when the beans are crisp-tender with some caramelized spots. No need to roast green beans to oblivion.
