I didn’t have a lemon so I used red wine vinegar. I didn’t have parsley so I used extra cilantro. I didn’t even have corn so I used a can of hominy. That’s the great thing about pasta salad…use what you have! The best part is this pesto! Yummy yummy! Great recipe! Thank you!
