Yes! It’s about time to pull out the cozy sweaters and dive into some pasta. I’m not a fan of being outside in the cold, but I do love the emphasis on comfort that comes with cooler temperatures. Now where are my stretchy pants?
Below, you’ll find twelve hearty and healthy vegetarian pasta recipes that I’m looking forward to eating this fall and winter. I always opt for whole grain pastas, which keep me fueled so much longer (DeLallo brand is my favorite) and load them up with veggies. You can read feedback from C+K readers who made these recipes below.
I tried to pick seasonally appropriate meatless pasta recipes for this roundup. For more pasta dishes, check out my full pasta archives and my veggie pasta board on Pinterest!
1) Spinach Artichoke Lasagna
“I made this lasagna last night and it was delicious! never thought I would knew how to make lasagna, my husband was impressed ;) Thanks Kate!” – Cecilia
2) Parmesan-Crusted Cauliflower Steaks with Marinara
“Made this last night for dinner and it was great! I used marinara sauce that I bought from Trader Joe’s. I also added a little bit of basil as a garnish. I will be keeping this as one of my busy weeknight dishes. Thanks for the great recipe!” – Stacey
3) Spicy Roasted Ratatouille with Spaghetti
“I am new to your website and this is the first recipe to try. Me and my husband both greatly enjoyed it. We made it because it looked so beautiful in your pictures and it sounded delicious. It was a win on both fronts in my kitchen. It looked just as beautiful on my table and wow the taste was amazing. Can’t wait to try more.” – Rebekah
4) Creamy (vegan!) Butternut Squash Linguini with Fried Sage
“My 11 month old son gobbled this up!! As did my husband, and he thinks ‘vegan’ is a dirty word :) Thanks for this truly family friendly, satisfying, healthy meal.” – Mary
5) Roasted Eggplant Spaghetti with Miso Brown Butter Sauce
“THIS WAS DELICIOUS!! My teenage daughter deemed it ‘a restaurant-worthy meal.’ Can not wait for the leftovers for lunch tomorrow!” – Monica
6) Lentil and Mushroom Meatballs
“I just finished eating this for dinner and it was absolutely delicious! My carnivorous husband has declared it his favorite vegetarian dish :)” – Karen
7) Pumpkin Fettuccine Alfredo
“Kate, I’ve been wanting to try this recipe since you first posted it several months ago. I finally did! It was incredible. I’m counting down the hours until I can eat the leftovers for lunch. Thanks for this, I will definitely make it again.” – Janet
8) Spicy Sun-Dried Tomato and Broccoli Pasta
“Just wanted to say that this is my partner and my favourite pasta recipe and my probably my partner’s favourite recipe in general. It is so good! We always make it with chickpeas and it fills us up so well. I love how many ingredients there are in the dish so you don’t have to use too much pasta. Everyone I make this for absolutely loves it. Thanks for introducing it to us!” – Brooke
9) Lemony Collard Greens Pasta
“Made a big batch of this tonight for a bunch of fussy eaters, and it was a HUGE success! I used kamut pasta for the gluten intolerant among us, and it worked out beautifully. I scaled the recipe up for 6 people, so I did the collards in a cast-iron wok, which was just the right size and made it easy to stir quickly and keep the greens from clumping. Everyone went back for seconds, and we practically licked the bowl clean. Thank you!” Missy
10) Arugula Walnut Pesto
“This is so easy and flavorful. It makes me want to forget about basil pesto. Love it!” – Todd K.
11) Baked Chiocciole with Brussels Sprouts, Apples and Blue Cheese
“I guess I’m weird because I didn’t think twice about putting apples in pasta! This was super great of a dish. I went way overboard on the blue cheese (and it turned out wonderful) and saved the olive oil to drizzle over the top. Super yum! Thanks.” – Elizabeth
12) Super Kale, Hemp and Flaxseed Oil Pesto
“This recipe ROCKED! I used walnuts and olive oil because it’s what I had on-hand and I even used leftovers as part of a bruschetta.” – Stephanie

Oh, the baked pasta with apples looks incredible.

Lovely post! I can proudly say I made them all except for the kale pesto thing (and I don’t know why because I adore kale and throw it into everything, from breakfast smoothies through lunch kale salads to your kale burritos or kale stir fry for dinner), but I think I will change that tonight. Your pastas are always lovely (I also often make the sun-dried tomato pesto pasta with SO MANY vegetables) and I am probably gonna visit this post way too often during the cold days coming.
Kate
Thank you, Evelyn! That’s amazing! Hope you love the kale pesto. I think you will. :)
Issie
I made the spicy sun dried tomato and broccoli pasta on a Friday night when I was feeling a bit lazy and it was perfect! Absolutely delicious and has become a weekend favourite!

Made the spicy sun dried tomato and broccoli pasta last night. I *know* I sound like a broken record, but it was delicious! I added a can of garbanzo beans — yum! My husband wanted more pasta so I might play with the proportions a bit, but it’s definitely a keeper. Thanks again, Kate!
Kate
Thank you, Alexa! You can play that broken record as often as you’d like here. :)

We love your recipes, especially the broccoli and sun dried tomato pasta. Had no idea you were from KC as well! I grew up there and now live in NYC, but I’ve made this for a ton of my KC Crew in NYC and we love it.
Thanks so much!
