If you’re craving fresh meals again after the holiday, you are in the right place! Without further ado, here are the most popular recipes on the blog this year. I’ll be back in a couple of days to share my favorites that didn’t make this list.
1) Favorite Quinoa Salad
Gluten free and vegan
“I was surprised to read this recipe and realize that I happen to have all of the ingredients in my kitchen! I whipped it up today and it is so delicious. Definitely going to make this again!” – Jenna
2) The Best Guacamole.
Gluten free and vegan
“I’ve always done guac simply with lime juice, salt and cumin to rave reviews BUT after making this C&K-style last night, I can never go back. Wow! The tiny onion crunch and pop of salt and coriander is divine. Thanks for another winner!” – Janelle
3) Vegetarian Pho
Gluten free and vegan
“Ok Kate….You are amazing:) I have made this once a week for almost 2 months now and my husband never tires of it. I make the broth in the Crock-Pot so I can enjoy the smell all day. Sooooo delish!!!!!!!!!” – Joey
4) Extra Vegetable Fried Rice
Gluten free
“I love this blog and all of the recipes in it! I made this extra vegetable fried rice for dinner and we had no leftovers–this meal could easily be one of my favorite vegetarian dinner recipes. I am so excited to see what other recipes you come out with!” – Colby
5) My Favorite Chia Seed Pudding
Gluten free and vegan
“Kate is right – this tastes exactly like an orange creamsicle! I used a store-bought blend of almond milk & coconut milk but otherwise made this exactly as written. I topped mine with a small banana. Delicious! This high-protein meal is a great breakfast or dessert.” – April
6) Vegan Mac and Cheese
Easily gluten free, and vegan
“First time using nutritional yeast/making vegan mac n’ cheese and it was delicious! I decided to use this recipes over some others I found because of the addition of potatoes and cashews – it gives the sauce more substance and creaminess. Overall, not hard to make at all! Good weeknight option as it doesn’t require much time. Oh and added mushrooms, broccoli and collard greens!” – Bri
7) Fresh Black Bean Salad
Gluten free and vegan
“I discovered this recipe last week and couldn’t believe how easy and how tasty is was – usually I can’t find anything that’s easy to make AND tastes incredible. Already planning on making another batch tomorrow to last me for my lunches over Christmas. Thanks Kate!” – Evie
8) Vegetarian Italian Chopped Salad
Gluten free and easily vegan
“I LOVE this salad! I make it without chick peas and cheese if I want it as a side salad, or as-is for a filling dinner or lunch option. The dressing is so good. Excited to try some new recipes from your cookbook which I pre-ordered!” – Kristen
9) Crunchy Thai Peanut & Quinoa Salad
Gluten free and vegan
“This salad was amazing. Everyone loved it. I will be making it over and over. Really that good!” – Cheryl
10) Mexican Quinoa Stew

Awesome list – and reminds me I wanted to make your pho once it finally got cold here in Houston. My favorite of your recipes this year is the Italian Eggplant Parmesan (https://cookieandkate.com/2017/italian-eggplant-parmesan-recipe/) since it has finally convinced my husband that he likes eggplant. I noticed it doesn’t show up on the “Dinner” section of the site, maybe it’s missing a tag?
Kate
Happy to hear that! I will look into it :)
