Wonderful fried eggs. They turned out absolutely perfect and my boyfriend practically did cartwheels! The cast iron pan is the secret and hot oil.

Personally, I think the perfectly cooked egg is how the person eating them loves them cooked. I happen to love mine with Crunchy and Runny, so your method should work beautifully for me. To those dissing this method, maybe the classical French way is not what many people like. I tell people “I won’t Yuk your Yum” if you don’t do mine.
