(I’ll get to the recipes in a minute.) Cookie got hurt this weekend. My worst fear about moving to this house came true when she raced out of my new front door toward the nearest busy street. When Cookie escapes, she doesn’t stop to smell the roses. My wild little dog shoots off like an arrow at 25 miles per hour. The following few and terrifying minutes ended with me abandoning my car in the middle of the road and racing to my injured baby like a crazed mama bear.
I think she’s going to be ok. The car hit one of her back legs, which is, miraculously, not broken. I took her back in yesterday to get her wounds stitched up and they discovered that the damage to her ankle is worse than we realized. Today, my bouncy circus dog’s back leg is bound in a polka-dotted purple cast and can’t jump onto the couch. She’s snoozing next to me now. Rest up, my sweet pup, because we have a million more miles to walk together.
I’ve spent the past few days watching Cookie’s chest rise and fall and feeling overwhelmingly thankful that she’s still here with me. Cookie is not “just a dog”. She’s my best friend. My sidekick. My chief crumb catcher and ornery assistant. My snuggle buddy and walking partner. Maybe you know what it’s like to love a dog so much.
I think that the only real positive outcome of this accident would be to prevent another accident. I have the name and number of one of the best animal behavior specialists around, so we’ll be working together on this. If you have experience with dogs that are flight risks, I’d love to hear your suggestions. Spare no expense.
In lieu of a new recipe today, I thought I’d create a little roundup of my favorite, seasonally appropriate Mexican recipes. Super Bowl Sunday is just around the corner, and something about the Super Bowl makes us Americans crave spicy south-of-the-border snacks. (Maybe it’s all of the Tostito’s commercials?)
As usual, I don’t even know who’s playing, but I hope to share the day with friends and fill my belly with a homemade meal. I’m about to polish off the last of a delivery pizza, so I surely need some home-cooked goodness.

1) Butternut Squash Chipotle Chili with Avocado
Gluten free and vegan
Before we get any further, I should clarify that these meals are loosely inspired by my favorite Mexican meals. I have no idea if vegetarian chili is served anywhere in Mexico, but I do know that this chili has been a hit for those who have tried it. I’m also noting which recipes are vegan and gluten free (they’re all vegetarian) since diets become more important when you’re serving a crowd.
2) Beer Bean-Stuffed Poblano Peppers
Gluten free if your beer is gluten free
Roasted pepper stuffed with boozy beans and spices. I’m not entirely convinced that the beer evaporates during cooking so you might not want to serve this to kids.
3) Blue Corn Nachos with Homemade Guacamole
Gluten free
Nachos are a necessity. These are covered in vegetables for less damage. You’ll also find a recipe for guacamole with chopped radishes, so good.
4) Black Bean Salsa
Gluten free and vegan
This was my first recipe post ever. I got such nice feedback on it that I posted more recipes, and here we are. This recipe yields a ton of salsa, so it would be a great addition to a potluck table. Bring chips, too.
5) Sweet Potato Burrito Smothered in Avocado Salsa Verde
Vegan option
People freak out over this avocado sauce. You gotta try it.
6) Crispy Mushroom, Spinach and Avocado Quesadillas
Gluten free if your tortillas are gluten free
Crispy grilled cheese on the outside. Mushrooms, sautéed spinach and avocado on the inside. These still taste good after they’ve cooled, by the way.
7) Tortilla Soup
Gluten free and easily vegan
This is a recent favorite, a vegetarian tortilla soup flavored with a dried chili pepper.
8) Quinoa Black Bean Tacos with Creamy Avocado Sauce
Gluten free and vegan
I’m not sure if you can find quinoa tacos in Mexico, but these are sure delicious. They take cues from traditional beef tacos, so there’s that!
9) The Best Black Bean Soup
Gluten free and vegan
A creamy (yet cream-less), spicy, hearty soup. This would be a great main course for a crowd.
10) Skinny Lime Margaritas and Skinny Blood Orange Margaritas
Gluten free and vegan
Margaritas, of course! Basic lime on the left and a pretty pink variation on the right. Neither of these require orange liqueur, which means you can spend your money on a quality, 100 percent agave tequila instead. Your body will thank you the next day.

I’m so glad Cookie is going to be okay! I cannot imagine how scary that was. We just started with a dog behavior trainer yesterday! We’ve done other types of training in the past but started to read up on behavior training and it just makes so much more sense. All of the other training would work kind of temporarily but we never got to the root of their problems. We talked to the trainer for nearly 2hrs at our house and practiced a few things with our dogs and the clicker, which they started responding to quickly. They have some similar but mostly opposite issues and we are beyond ready to get to the bottom of them. We get frustrated and so do they, but we are feeling very hopeful. This post gave me chills, thank god she’s ok!! I have the same panic about open doors – my little one is SO terrifyingly fast. I almost lost her twice and I’ve never run so fast in my life trying to get her back (which isn’t actually what you’re supposed to do, but I was panicking).
One thing we’ve practiced (while we play in the yard) is running away from her, so it’s a game for her to come to us… although I’m not confident that would work for us if she ever gets out and is freaking out. I can’t wait to hear what you find out from the specialist…

Seriously, though, I’ve learned from past experience that catching up to her on foot is impossible. One time she got out in a neighborhood and my friend was driving along the road (going 25 miles an hour) while she raced down the sidewalk. I’m so glad she’s ok. I have trained both my dogs (and one is a runner!) to NEVER leave the house, car, etc., unless it is on command – which is FREE. It’s a hard one to teach, but both my dogs will sit with the car door open (or house) and I can stand outside and say all sorts of things – and try to lure them (called proofing) but they will not leave the car or house unless it is on command. This happened when my runner jumped out the truck window because she saw a squirrel. Luckily she was not hurt. It can be done – lots of patients and lots of high value treats. I hope she is on the mend soon! I know just how you are feeling – keep us posted!

Ohhhh, poor Cookie! And poor you! I never thought I was that much of a dog person, until we bought a little puppy (Maggie) 8 months ago who I now completely dote on. She ate something and was choking a little in the first week we got her – I called the vets office about 4 times in the space of two hours and was just about to race her in there when she coughed up a tiny piece of twine. (I hate to think what I’ll be like when I have human babies!) Maggie also walks fine on her leash and stops to sniff everything and stays by my side, but as soon as she has the opportunity she races off and wont come back when she’s called. I havent been able to find a behavioural trainer in my area, so I’d be interested in hearing what you learn if you’re willing to share. Best wishes to Cookie for a speedy recovery! x

Now on to the real reason of my comment (I am usually just a lurker!). My husband and I live on a small farm and we have somehow ended up fostering, permanently, a motly crue of rescues. We currently have 5 and our maximum at one time has been 6 dogs. We have been doing this for years and we have had many dogs. You can imagine what a challenge it is to keep our dogs within the boundaries of our farm, given the exciting wildlife on the other side of the fence (bunnies, foxes, possums, lizards, pheasants, and many more etc.). After a horrible experience where on of our dogs escaped during a storm and was killed, we decided to install electric fences all around our property. It was much easier than it sounds, and relatively inexpensive. It is true my husband did a lot of the work, but it should be a breeze in a smaller enclosure.
After getting the fence up and “hot” we had several sessions walking each of the dogs around the perimeter. Eventually, even as we incorporate new dogs into our pack, everyone minds the boundaries. We have had only one escape, and she clearly did not intend to go across, because she then sat on the other side of the fence and cried until we got her back across!
The entrance to our property has a “hot” wire running across, about two inches off the ground. We wanted something that would not require us to connect and disconnect when we came and went. It is very funny to watch the dogs walk or run right to the wire and stop. They could easily step over it, but they do not. Yes, they have occasionally touched parts of the electric fence and yelped, but so have I! It is a very uncomfortable feeling, that they try to avoid, but it is not excruciating.
Please forgive this very long comment. Our dogs our part of our family; when one is in pain, we all suffer. So I can totally understand what you are going through. Behavior therapy is great, and electric fences are WONDERFUL. Together, they should keep Cookie safe. Speedy recovery to both of you :-)

oh I am so glad to hear that she will be alright. I too have been privileged to have had a couple of dogs as best friends – life buoys if I’m going to be honest about it – so I can empathize with how scary that was. And continues to be in terms of a possible recurrence. Unfortunately I do think there is only so much training that can be done since sometimes instinct just takes over. and it certainly doesn’t help to put that in place and anything else including an abundance of caution that you can as the more barriers in place the safer she will be. I hope Cookie’s angels continue to watch over here and protect her.

I can completely relate to going “Mamma Bear” with pets. I may not have much of a maternal drive for children but when it comes to animals, watch out. Poor Cookie. She sounds a bit like my Darcy who is a bit quick to run and a bit slow to learn not to. She is the first dog I have ever had that has been so hard to train. She got out the front door one day and just ran down the road – right along the centre line!! Since then I have put one of those metal play pens – you know the kind? They are just 5 or so wire panels joined together and you can make them into a pen by drawing the two end together? Well I put one in a semi circle around the front door. It is easy just to swing one end panel aside to go in and out, but it means Darcy cannot get to the front door while it is open – especially useful when someone comes to the door and you can’t avoid having to have the door open while you talk to them. It’s working great for me and I’d rather have the pen there than run the risk of her slipping around my legs and out the door again.

I learned a lot from the trainer, and she’s going to start wearing a collar to keep her back from the front door, but I would love to have a physical barrier at the door, too. My poochers are exactly the same way and once they leave the front gate it’s a chase in the car to get them home again, because I certainly can’t run that fast anymore to catch up. Ugh! All these recipes look so good. We used to live in Eastern Washington and there were a ton of authentic Mexican restaurants. The downtown areas of some small cities even look like it was transplanted straight from Mexico. After moving to the East Coast, we haven’t found any Mexican places that have any decent Mexican food. Now, on to the Mexican recipes…I thought you would include your vegetarian chili with sweet potato. It’s the only chili I make now. That and many more of your recipes, including your banana bread. At first I was stumped by the adding of the water and soda at the end of mixing. I’m not sure why it works but it works! Since your recipe calls for coconut oil, I add shredded coconut to mine. Yummy!

Hi Kate, Mary Ann and 7 collies here, so, so sorry to hear about Cookie’s accident but very happy to hear she is on the mend. Best thing I can tell you is to teach her to wait at any entrance/exit with a ‘sit’ command and then the release of ‘ok’. We teach that to all of our dogs, stay consistent and breathe. That way, she will be looking to you for the release and be more likely to stay attentive. And practice that recall! Now, I’m off to bring in Josie, who is trying to herd the horses from the front yard!

Mary Ann, thank you. Cookie and I are going to work on entering/exiting/recall as soon as her leg is better and the snow has melted! We’ve met with a trainer and I’ve bought a dog training book, so I’m hopeful that I can train her to be better. It will be an exercise for the both of us.

Oh my goodness, I hope Cookie heals up fast! So sorry to hear about her accident. I’m sure you have much more dog experience than I, but one thing that works really well with our poodle is his “urgent recall” — it involves a bit of training, but it also involves cheesy sausages for him, so he learned fast. Luckily we’ve only had to use it once, but it worked perfectly.
On another note, all of those recipes look muy delicioso! Hope you have a relaxing stress free weekend with your pup:)

I am so, so, sorry. Sending all my best wishes your way. At my house we have 3 sweet little girls, so we just keep a baby gate on the front door. It’s a little tricky coming home from Costco (or anywhere really) but so so worth the piece of mind that the welcoming committee stays safe :)

Hi Kim, thank you. I’m glad you have found a way to keep your girls safe! Cookie is both a runner and a jumper, so she would be able to hop over a baby gate, but I did learn some great tips from our trainer. I hope they work.

I am so thankful she is okay! My fellow four-legged was a flight risk for a few years. I always kept her on leash and luckily never had her escape. She eventually got over it (well, unless squirrels are involved – all bets are off at that point). Seeing a trainer is a great solution! I’m sending healing thoughts your way.

I am so sorry to hear about Cookie’s accident Kate! Argh. It’s so anxiety provoking when your dog escapes. My dog, Jack, used to dart off like a lightning bolt when he escaped from our old house. I never got around to working out how to prevent it though… he’d always come back a few hours later when he was hungry. I hope that you have some luck with the behaviour specialists!! On the brighter side… these Mexican recipes have made me feel happy, sunshiney and nourished, just by looking at them. I’m sorry about Cookie, but I’m glad her injuries are treatable. My dog, Seamus, has always been a runner and I also live near a busy main road. The times he’s taken off, the road was right where he headed. He always made it across, but it stopped my heart every time. When he was younger, his leash was clipped on him before the door opened and he still has to sit EVERY TIME before going out the door. He doesn’t sit without the command (despite seven years of constant training), but the realization that he’s supposed to do something before going out the door seems to slow him down. Of course, coming into the house is the harder part. I imagine a trainer will really help with that.
Best of luck getting it under control. It’s scary to have a dog that just takes off like that. And feel better, Cookie!

Jennifer, thank you. I’m so glad Seamus has not gotten hurt during his escapes. The trainer told me to never walk out the front door with Cookie (we’ll always use the garage door, and I’ll always make her sit and stay before we exit). I’m going to try my best to train her not to run out the door when people come over. Oh, I’m so hopeful this never happens again.

I am so glad Cookie is okay! That must have been so traumatic! I foster dogs here and there and my last one was a “darter”, straight out the door and very sneaky about it. She got past me once but I live on a cul de sac and was able to get her back. My vet recommended one of those zoned collars that could be set for the front door perimeter and I was going to get one, but the dog got adopted very quickly. A perfect dog other than that one dangerous habit. But training is a great idea too and I hope it works. With some dogs, running is just ingrained into them. I think you live in KC in an apartment? I am in OP, have a big backyard and three friendly dogs. You are welcome to bring Cookie over anytime for some freedom in safe surroundings. Hi Michelle, thank you so much for your sweet comment. Cookie is doing better now, but we’re going to the vet for hydrotherapy three times a week. She usually minds me when I tell her to stay before I open the door, but it’s the extenuating circumstances that I worry about. The behavioral specialist told me about a collar that sprays citronella every time she gets too close to front door, so I’m going to try that. If that doesn’t work, I’ll resort to the zoned shock collar. I just moved from an apartment with double doors on the Plaza to a little house in Prairie Village. Thank you for the invite! I might take you up on that.

I’m so sorry to hear about your dog. The first day in our new house (literally minutes after getting the key), my pup ran out the door straight into the street and after almost getting hit by a car myself, we caught her. My immediate response was a tear filled, “build me a fence” to my husband. Needless to say, the picket fence looks great. I fear this happening again to her and know how much you much love Cookie. A fence is an excellent idea. Using an electric fence allows other dogs and humans to walk on your property and take your dog.
In the meantime, use a gate or a screen door.

Your post reminded me of all the times my dog disappeared, I used to have a Border Collie and they are the worst for keeping in and could easily be called escapologists. It did see him spend a few nights and rescue centres or locked in parks but he was usually ok. I wish I had some ideas for keeping dogs in but nothing seemed to work with Sam. I really hope Cookie is alright.

Hey Mercedes, sounds like border collies and Australian shepherds share some similar traits. Cookie has gotten out many times before, but this is the first (and the last, I hope) time that she has gotten hurt. I learned some useful tips and training techniques from a behavioral specialist, so now it’s just a matter of implementing it all. I am so hopeful that I can prevent this from ever happening again.

When I was moving a few years ago, my kitty cat got lose and we couldn’t find her. She’s been an indoor cat her whole life so this was a really big deal. We eventually found her cowering under a neighbors wagon but it was like my whole world stopped. So I get this. Having pets (and kids) is so scary sometimes. But so worth it! Hello I know this entry is from a few months…. but I have a comment… in mexico we don’t really eat chilli of any kind… the other recipes are more mexican-like. My little “Meximutt” loves deer and pheasant and shes off! So she never goes out without a buzz collar and me with the remote. They have no sense at all when the primal brain kicks in. Mostly I only use the “beep” or the vibration for training her to stay in her boundries, but have used the shock twice (level 10 out of 100). Some say it’s cruel but it protects her to play another day!

I was hoping to see the Mexican Roasted Veggie Bowl with Beer Beans on this list because I have a question. For that recipe, I don’t have any pinto beans, just one 20oz can of cannellini beans, two 15oz cans of black beans, or two 15oz cans of chickpeas. Which do you recommend? If I use one of those other beans should I modify the recipe at all?
