So delicious! I’ve made this several times and it always comes out great! I use dairy free plain/unsweetened coconut yogurt (So Delicious brand) and it works perfect. Recently I’ve been cutting the cauliflower into florets so it cooks faster and just halfing the cooking times.

Just made this last night, and it was my first time roasting a whole cauliflower. This turned out to be one of the BEST dishes I’ve ever made. Absolutely amazing! The yogurt sauce was so good, I could eat it alone or use it as dipping sauce for other veggies.
