I’ve been looking for a recipe for panzanella that is as good as one I had in Sonoma several years ago, and this is the one for me. I love how flexible it is, I used some leftover asiago cheese bread for the croutons, grape tomatoes and white onions as I was out of red, and didn’t have cucumbers or olives. It was absolutely delicious, though, and our family of three ate all of it! Thank you!!!!

At the very end, just before serving, I added a small head of Romaine, chopped (with a plastic lettuce knife-those things work like a charm!) after allowing everything to marinate.
