This is how it is done at his restaurant. I tried it and it did indeed “step up” the liveliness of this delicious cocktail.

I have been doing similar things with 2 oz bourbon, 1 oz maple syrup and .5-1 oz fresh lime juice or lemon juice. Sort of a variation on a sour. Maple really mellows out the drink.
