“What can vegetarians eat on Thanksgiving?” Speaking as a vegetarian, I don’t need or expect a designated entrée. I’m happy enjoying hearty side dishes, like salads made with wild rice or chickpeas. Pass the mashed potatoes, please!
That said, you’ll find plenty of colorful main dishes in the list below. From veggie lasagna to stuffed acorn squash, these recipes will appeal to everyone. Meat-like substitutes are typically underwhelming, so you won’t find any here.
I know this year’s festivities may look different. Just remember when cooking a vegan meal to use pot or pan that has not been used for meat dish. Most won’t know it but for ethical reasons please don’t use the same roasting pan you cooking chicken in to now roast potatoes or another vegetable.

This is such a beautiful round up of recipes Kate! I’m sitting at my work desk as I type and I actually got a little happy jump in my stomach as I saw some of my favourites in a happy Thanksgiving mingle (I like to think that they are having a party of their own on this page!). Thanks for these veg Thanksgiving recipes! We usually have veg or faux meat lasagna (we like Gardein crumbles); this year I’ll try your recipe. And I have a squash screaming to be stuffed with quinoa or made into a risotto. Thanks for this trove of recipes; I’ll try several this season. You never fail to offer creative recipes.
